I made this last night for a casual dinner gathering and it was very good! I did not have preserved lemon, unfortunately. This dish was labor intensive to prepare — it took at least an hour for prep, cooking, and some clean up for sure. I thought of making it the night before but believed it would taste best at room temp. I allowed extra time and just let it sit until serving time (about an hour), which worked out well. This would be fantastic to take to a potluck or contribute to a BBQ when you do not have to prep the rest of the meal.

This Lemon Orzo is crave-inducing! I made it a couple weeks ago, along with a couple other RPL summer salads, and this is the one that called to me today, even though I’m not in the mood to cook.
